MS Update & Freezer Meals

I wonder what kind of person I would be today if I hadn’t been told as a child, on a daily basis, by almost every single person in my life, “Kristin, don’t be so bossy.“?

Now, to be a boss is a compliment. My entire life though, being assertive, knowing what I wanted and leading have been put under the con column, under BOSSY. Like, I have no blame or finger-pointing, that was just the way things were. Now we know. And once you know, you can’t unknow.

I met my new neurologist a few weeks ago. My appointment was at 10:15 in Kelowna. I sat in the waiting room in front of the clock watching the hands tick by. At 10:21. I followed my new neurologist into his office. I introduced myself, and he asked me to describe my symptoms. I started at my head and described my memory issues, brain fog, words that I could no longer wrap my tongue around and he interrupted and said is that all? By the time I got to my feet, I was basically just pointing to limbs as he rushed me into the next part of our appointment, the exam. I touched my nose, he tapped my knee, I pressed on his hand and then we went back to his desk. He told me I had no new lesions on my MRI from last January (thankfully my family Dr had told me that earlier or I would have been worried for the last 8 months.) He told me that I had an excellent exam, I’m on the best drug out there and I need to focus on the positives. He said that the most important thing is knowing my triggers and just not doing them! He assured me that he would put in a request for another MRI in 10 months and he would see me again in a year. I mumbled something about just wishing I could do some thing about the fatigue as I walked out and he yelled, “wait I can give you a prescription for fatigue.” And he quickly wrote a years worth of prescription and said as he walked me to the door, “start with one a day and then move to two a day if you feel like it.” And sent me on my merry way. I walked out at exactly 10:30.

9 minutes.

At one point towards the end of our appointment, I knew I would not have time to ask questions and that I was being rushed. Every time I voiced a concern, he interrupted and told me to stop being so negative and to focus on the positive. As he began to wrap things up, I panicked thinking about how long I would have to wait to see him again and I put both my hands on the table and said with authority, “now please wait, I need to just get this out so please listen to me and please just let me ask this question. It has nothing to do with you (trying to stop him from cutting me off in defense). I have a question about me and something that surgeon said to me, and I was hoping you could answer! Please let me just finish my question!” He let me ask it finally, but I could see his think bubble… Bossy.

Meh.

I have been seeing a councillor/therapist lately. I think that I am dealing with my MS diagnosis well, but there is always room for improvement. She says I use humour to mask my trauma. Trauma. That’s a BIG word. I’ve never looked at the bumps in my road of life as trauma, I look at them as bumps in the roads of life that everyone has and you either deal with them well or you don’t. My view is softening a little as I come to see that I have tools to help me cope with those road bumps and am learning new tools all the time.

It is exhausting work but I am the BOSS of my life and that’s a POSITIVE thing! Life is a journey and we are always evolving and I for one, am grateful for that. 

There is nothing that I like more than Freezer Meals! Seriously, meals that taste delicious, take minimal effort to prepare, and requires zero thought? Sign me up! This week I hurt my back and we had to rely on fast food and easy dinners but if we had any of these delicious meals waiting for us in the freezer, we would have been golden! But we didn’t. Next time… I will be prepared!

We are big fans of creamy pasta dishes and this Creamy Garlic Alfredo Chicken (Freezer Meal) will satisfy that craving perfectly! By adding just a few ingredients and serving this crockpot dish over your choice of pasta, everyone will be a happy diner!

We love soup. What I don’t like about soup is the prep. This Southwestern Hamburger Soup (Freezer Meal) recipe has ZERO prep! You don’t even have to fry the beef first! Just toss everything in your crockpot and serve when bubbly and piping hot! *Because you can’t drain the grease off the beef, I suggest buying very lean ground beef for this recipe.

You can never go wrong with slow cooker soup and this Sausage Lentil Soup (Freezer Meal) is no exception. This recipe requires a little bit of prep, you have to saute the sausage before you freeze your soup ingredients, but that small extra step enhances the flavour so much, you will be happy that you did it!

Meatless chili is my favourite type of chili! This Southwestern 3-Bean Chili is so easy and is so comforting and filling! We have made this one many times before and is a winner in any season but especially during football season!

How can I make meals even easier than freezer crockpot meals? By making freezer MICROWAVE meals! These Freezer Egg Bakes make the most incredible Denver, Meat Lovers and Veggie Lover Scrambles! Just pull your desired mix-ins from the freezer and microwave with your choice of 1 or 2 eggs and you have a delicious and healthy meal. I even made a frozen quad bag for dinner for all 4 of us!

Ginger Peach Chicken (Freezer Meal)

Ingredients

  • 1 lb boneless, skinless chicken thighs

  • 3/4 bag frozen peach slices

  • 1 red onion, sliced

  • 2 tablespoons brown sugar

  • 2 tablespoons soy sauce

  • 1 tablespoon ginger, grated

  • 2 teaspoons ground coriander

Directions

  • Place all ingredients into a Ziplock freezer bag.

  • Freeze until ready to use.

  • When ready to use
  • Thaw freezer meal in the fridge overnight.

  • Dump ingredients into crockpot and cook for 4–5 hours on high.

  • Serve with rice and steamed veggies.

    Creamy Garlic Alfredo Chicken (Freezer Meal)

    Ingredients

    • 3-4 chicken breasts

    • 1 jar Alfredo sauce

    • 1 can diced tomatoes

    • 2 teaspoons garlic powder

    • 1 teaspoon Italian seasoning

    • 2/3 cup Parmesan cheese

    • 1 tablespoon garlic, minced

    • 1 cup mushrooms, peeled and sliced

    • 1 bunch of spinach

    Directions

    • Combine all ingredients in a freezer bag except for spinach and mushrooms.

    • Freeze.

    • When ready to use
    • Thaw freezer meal in the fridge overnight.

    • Dump ingredients into crockpot and cook on low for 6-7 hours.

    • Saute mushrooms in a skillet until browned. Season with salt and pepper.

    • Add the spinach and sautéed mushrooms to slow cooker and cook for 5-10 minutes more.

    • Serve over your favourite pasta.

      Southwestern Hamburger Soup (Freezer Meal)

      Ingredients

      • 1 lb extra lean ground beef

      • 2 cups beef broth

      • 1 can black beans, drained and rinsed well

      • 1 can diced tomatoes with chiles

      • 1 1/2 cups frozen corn kernels

      • 1 can pinto beans, rinsed and drained

      • 3 cloves garlic, minced

      • 1 packet taco seasoning

      • 1 cup elbow macaroni, uncooked

      • 2 cups Mexican-blend cheese, shredded

      Directions

      • Place everything except the macaroni and cheese into a Ziplock freezer bag.

      • Freeze.

      • When ready to use
      • Thaw freezer meal in the fridge overnight.

      • Cook in slow cooker on low for 6 to 7 hours. Use a wooden spoon to break up the meat.

      • Add pasta and cook for the last hour or until macaroni is al dente. Top each bowl of soup with shredded cheese.

        Sausage Lentil Soup (Freezer Meal)

        Ingredients

        • 12–14 ounces kielbasa sausage, sliced

        • 2 cups brown lentils or yellow split peas

        • 2 carrots, diced

        • 1 celery rib, diced

        • 1 onion, diced

        • 3 garlic cloves, minced

        • 1 can diced tomatoes

        • ½ teaspoon Italian seasoning

        • 8 cups vegetable stock

        Directions

        • Brown the kielbasa and diced onion and let them cool completely.

        • Place all ingredients except vegetable stock into a Ziplock freezer bag.

        • Freeze.

        • When ready to use
        • Add frozen meal and 8 cups of vegetable stock to slow cooker.

        • Cook 4–5 hours on high.

          Southwestern 3-Bean Chili (Freezer Meal)

          • 1 can black beans, drained & rinsed

          • 1 can kidney beans, drained & rinsed

          • 1 packet taco seasoning

          • 1 can diced tomatoes with chilis

          • 1 onion, diced

          • 1 bell pepper, diced

          • 1 bottle green chili enchilada sauce

          • 1 cup frozen corn kernels

          • 1 tablespoon chili powder

          • 1 teaspoon cumin

          • 2 cups vegetable stock

          • Salt and pepper, to taste

          Directions

          • Combine all ingredients except for the vegetable stock and place in a Ziplock freezer bag.

          • Freeze.

          • When ready to use
          • Thaw freezer meal in the fridge overnight.

          • Cook ingredients in slow cooker for 5–6 on low.

            Freezer Egg Bakes

            Ingredients

            • 1-2 eggs

            • 1-2 tablespoons milk

            • hot sauce, to taste 

            • salt & pepper. to taste 

            • Denver Egg Scramble
            • 2 tablespoons onion, diced

            • 2 tablespoons bell pepper, diced

            • 2 tablespoons deli ham or turkey diced, cooked

            • 1 small potato diced, cooked

            • Meat Lovers Egg Scramble
            • ¼ cup ground breakfast sausage, cooked

            • 2 tablespoons bacon diced, cooked

            • Veggie Lovers Egg Scramble
            • 2 tablespoons mushrooms, diced

            • 2 tablespoons broccoli, chopped

            • 2 tablespoons cauliflower, chopped

            • 1 tablespoon onion, diced

            • 2 tablespoons bell pepper, diced

            Directions

            • Dice and assemble your ingredients, then place into Ziplock bags.

            • When ready to use
            • Thaw chosen egg mix-ins.

            • Spray a microwave safe mug, bowl, or mason jar with oil and add thawed mix-ins, 1-2 eggs, milk, hot sauce and season with salt & pepper. Stir well.

            • For one egg: Place in microwave and cook for 1 minute, stir if needed, then cook for 1 more minute. Add 30 seconds at a time if your scrambles aren’t cooked through.

            • For two eggs: Place in microwave and cook for 1:30, stir if needed, then cook for another 1:30. Add 30 seconds at a time if your scrambles aren’t cooked through.

              I could definitely tell it was a full moon week! Lol I pulled my back but that didn’t stop my family from having a fantastic week! We donated $65 to each of the Kid’s Terry Fox Runs, in honour of what would have been, Mom’s 65th birthday on Thursday. Ninja tested out his new clubs, took HBear to VinylFest and started back up at guitar lessons! SBean was extremely busy starting the  Soundstage season this week, helping out at the school open house for Leadership, and having a blast at her best friend’s birthday party! HBear had a great week at school, work and celebrated the week with dinner out on Saturday with Daddy and on Sunday with Papa!
