Father’s Day & Foil Packet Dinners

Mother’s Day and Father’s Day are weird. When I was a kid, I woke up early and made awful pancakes that I coloured purple or green and I would bring them to my parents in bed. However, I never made them coffee, which I now know is what they really wanted. In fact, I never did anything that my parents would’ve liked for “their” special days. These days, Mother’s Day and Father’s Day are just more work for us… The mother and the father!  The schools don’t get the kids to make presents for their parents anymore, and I literally have to hound the kids for two weeks to make cards! The only gift Ninja receives is from… ME! He isn’t MY Dad! BAHAHAHA Next year I say we cancel those stupid days and just appreciate each other and the people that gave us life, every day!

This year we decided to take my Dad, Ninjas’s Dad, and my Nieces’ Dad, my BIL lol, out for lunch and a local winery! We went to JoieFarm Winery for a delicious smoked barbeque buffet, a wine tasting, and a craft brew tasting from Cannery Brewing! Unfortunately it rained. June can be like that, it can be +30 and blistering sunshine or can be +15 and rain. Unfortunately, we got the rain. However, I’m happy to get some precipitation into the ground so hopefully our wildfire season isn’t as bad as it has been the last few years.

We had a really nice time! All the kids were well behaved, like usual, it’s always nice to get together as a group, and despite the rain, the heater was warm, and the views were stunning!

Happy Father’s Day to all the amazing Dads, Stepfathers, single Moms, Uncles, Grandpas, Papas and Brothers out there! It takes a village. 

Camping season is here! Not for me of course but for people who like to camp! Not me, but other people LOL. I may not like camping now but I did a LOT of camping as a Kid, right up into my 20’s. We did so much camping as a family that my Mom became Camp Master Kathy to my friends and she made the BEST camp dinners! Mom taught us ALL about the wonders of foil packet dinners and camping, or not, these meals are easy and delicious! Click the highlighted meals to go directly to the recipe!

A Breakfast Foil Packet is perfect for a summer morning. Let the grill cook breakfast while your coffee brews OR switch it up and  enjoy this easy packet for dinner like we did!

My favourite type of foil packet dinner is a Potato Sausage Foil Packet. This is just so easy , so tasty and so filling. Individual packets can be made according to preferred tastes and the sausage caramelizes so nicely, you can really taste the “campfire” in this one lol.

This Italian Chicken Foil Packet isn’t as pretty as the others because it is missing the bright beautiful pops of colour the other recipes boast, but what this packet lacks in colour, it makes up in FLAVOUR! This chicken tastes SO good, I would make this easy meal all year long and even for guests!

Breakfast Foil Packet

Ingredients

  • 1 lb little potatoes, cut into quarters

  • ½ onion, chopped

  • 1 bell pepper, diced

  • 2 tablespoons oil

  • 1 teaspoon seasoning salt

  • 1 tablespoon parsley

  • 1/4 teaspoon pepper

  • 8 breakfast sausages (uncooked), diced

  • 4 eggs

Directions

  • Preheat grill to 400 degrees F.

  • Combine potatoes, onion, and pepper with oil, seasoning salt, parsley and pepper in a bowl.

  • Lay out four large sheets of tin foil and spray the centre of each with oil.

  • Divide vegetables between the 4 foil sheets and top each with two diced sausages each.

  • Seal packs and place on direct heat on the grill. Cook for 15-18 minutes, until the vegetables are tender.

  • When vegetables are tender, open packs and crack an egg into the center of each and sprinkle egg with salt and pepper as desired. Loosely tent the foil over the egg (this helps to cook the top of the white) as much as possible, and close the lid on the grill.

  • Cook for 3-5 minutes, until desired doneness is reached.

    Potato and Sausage Foil Packet

    Ingredients

    • 1 pound baby potatoes, halved

    • 1 package smoked sausage, cut into slices

    • 1 cup green beans, trimmed

    • 1 cup baby carrots, halved

    • 2 ears corn, kernels shaved off

    • 1 onion, halved and thinly sliced

    • 1 tablespoon oil

    • 1 teaspoon garlic powder

    • ½ teaspoon dried parsley

    • ¼ teaspoon dried rosemary

    • ¼ teaspoon dried thyme

    • salt & pepper to taste

    • 2 tablespoons butter

    • 2 tablespoons chopped fresh parsley, optional

    Directions

    • Place potatoes in microwave-safe bowl and microwave for 4 minutes. Set aside to cool.

    • Preheat grill to 425°F. Place 4 large pieces of aluminum foil on counter, each about 18 inches long.

    • Place all ingredients EXCEPT for butter and parsley in a large bowl. Carefully toss, then evenly divide between centers of foil pieces. Top each with ½ tablespoon butter.

    • Close each packet by folding and crimping longer edges first, then folding and crimping shorter edges to fully seal foil pouch. Cook on grill or in oven for around 30-40 minutes, or until vegetables are tender and sausage is heated through. Carefully open foil packtes (careful, hot steam!) and serve sprinkled with parsley.

      Italian Chicken Foil Packets

      Ingredients

      • 4 chicken breasts, pounded to an even thickness

      • 1/4 cup olive oil

      • 2 tablespoons lemon juice

      • 1 tablespoon Dijon mustard

      • 1 tablespoon red wine vinegar

      • 3-4 garlic cloves, minced

      • 1 teaspoon dried basil

      • 1 teaspoon dried parsley

      • 1 teaspoon onion powder

      • 1 teaspoon salt

      • 1 teaspoon dried oregano

      • 1/2 teaspoon paprika

      • 1/4 teaspoon pepper

      • 1/4 teaspoon red pepper flakes

      • 1/2 zucchini, cut into ¼” slices

      • 4 potatoes, chopped into 1/4-1/2” cubes

      • 2 carrots, sliced

      • 1/2 onion, chopped

      • 2 tablespoons butter, chopped into 8 cubes

      • 1 cup mozzarella cheese, shredded

      Directions

      • Whisk together olive oil, lemon juice, Dijon mustard, red wine vinegar, garlic cloves, dried basil, dried parsley, onion powder, salt, dried oregano, paprika, pepper, and red pepper flakes in a shallow dish or freezer bag (whatever you are going to marinate chicken in). Remove 1/4 cup Marinade for vegetables.

      • Add chicken to marinade in bag, remove excess air and turn to coat (it will thick like a Wet Rub). Marinate room temperature up to 30 minutes while you prep your veggies or up to 2 hours in the refrigerator.

      • Meanwhile, add potatoes and carrots to a large microwave safe bowl. Add 1 tablespoon water. Cover, and microwave 5 minutes. Drain well.

      • Add zucchini and onions to potatoes/carrots in large bowl. Add 1/4 cup reserved marinade. Toss to coat. Refrigerate if not using immediately.

      • Lay out 4 pieces of aluminum foil on your counter. Spray foil with oil. Add one piece of chicken to each piece of foil. Evenly divide veggies between foil packets, placing around chicken. Evenly dot veggies and chicken with cubed butter (2 cubes each). Seal foil packets closed.

      • Heat grill to 400. Add foil packets, close lid, and grill for 15-20 minutes OR until veggies are tender and chicken is cooked through (internal temp of 165 degrees F).

      • Carefully open foil and sprinkle each chicken breasts (and surrounding veggies if desired) with mozzarella. Leave foil open and close grill lid until cheese is melted. Garnish with fresh parsley (I used fresh basil).

        We are down to the last few weeks of school and activities for the year! I had my monthly coffee date with my MMBestie and enjoyed some reading time on the balcony after my hot husband brought me home a delicious coffee. The weather has been unpredictable this spring with sunshine at the beginning of the week and torrential downpours for the rest. HBear had her final band concert of the year and was rewarded with the Top Grade 10 Percussion Award! SBean went to SPea and CPatch’s school carnival over the weekend while Ninja and I enjoyed watching the Oilers win their first and maybe last, hockey game of the Stanley Cup finals! We had a fantastic Father’s Day despite the dreary weather and I have been keeping up with my yoga journey for June!
