Freezer Meals: Homemade Biscuits, Hawaiian Chicken Tacos & Maple Pulled Pork

I have had so many people reach out and ask me, how my Sis’s freezer meals turned out? It has been hard to answer because my Sis is nothing like me, she is the 100% complete opposite of me, an oversharer. She is an undersharer 😂 I also don’t want to be that person that gives somebody some thing, and then bugs them, “do you like it? Do you? Tell me you like it!” The whole point of helping her out by making her some dinners alludes to the fact, that I realize that she is a busy full time working Mom and doesn’t have time to take pictures and gush to me about how wonderful my gift of food was 😂. PLUS… I already know 😜.

She has texted me a picture or 2 and said that so far all but 1 of the recipes have turned out really well!! That 1 recipe was her fault BTW, READ THE DIRECTIONS!! 😂 My 6 year old niece CPatch told me that the cauliflower curry dinner was her absolute favourite, and she wanted to lick her plate clean! So, I think they were a hit!


One of my Sister’s best friends growing up, and I’d like to think, as we grew up, my friend too, messaged me to say how much she enjoyed my freezer meal post, and was looking forward to more in the future! She also asked if I could do a post on budgeting for meal prep! I love a challenge and honestly I budget for my grocery shopping every week so I am working on a February weekly meal plan that’s budget friendly to share with you all! 

Ever since I have been diagnosed, I have found freezer meals to be a lifesaver for me and my family. Before that, I hated using them because I truly enjoy the process of prepping food and making daily dinners full of yummy ingredients. It is my calm down time between work and my evening/family time. Some people have a commute, I have dinner prep! Now, I don’t know how I am going to feel from day to day and knowing that I have healthy, delicious and easy meals ready to go, allows me to feel like there is one less thing to worry about. Plus the prep before freezing is SO much fun!!! Another benefit of freezer meals is that it is good for your budget! This week I wanted to share a few more budget friendly freezer recipes that I made for my family that have got back rave reviews!

SBean wanted to help so she put her baking skills to work and made freezer biscuits! These taste amazeballs!! Unfortunately she rolled out the dough a bit thin (she was thinking sugar cookies 😂). Either way they are DELICIOUS and so easy to pull out for any dinner throughout the week! We have eaten them ALL already!

Homemade Freezer Biscuits
Adapted from Money Saving Mom


4 cups flour
2 tablespoons baking powder
1 teaspoon salt
1 cup shortening
1 3/4 cup milk

Mix dry ingredients together.


Add in the shortening and mix until crumbly.

Add in the milk and mix until a ball forms.


Roll out onto a floured surface and cut into biscuits.



Freeze on a cookie sheet for 1-2 hours. Then remove and place in a airtight freezer bag.



To Bake: Pull the desired number of biscuits out and let thaw for 30 minutes to an hour. Bake at 450 degrees for 8-12 minutes. You can bake them straight from the freezer but they won’t rise much.

I am a BIG fan of Mexican food, especially tacos! Growing up tacos were so boring! Ground beef in a stale crunchy shell topped with iceberg lettuce and cheddar cheese. YUCK! As I’ve gotten older, I have tried tacos with different meats, different toppings and different shells. We love steak tacos, pork tacos, fish tacos (well my family does at least lol) and lettuce wrapped tacos! We love spices, and sweet heat and sauces! We have a brewery in town that serves the BEST tacos ever. They have this chicken taco that is sooo good it leaves you wanting more! This recipe is like that! HBear hates pineapple so I halved this recipe and froze 2 dinners so I could make it on days HBear is out with friends or on Thursdays when she has curling and dance after school. Unfortunately things got moved around this week so I ended up having this meal with the Kids while Ninja and my BIL were at a concert on Saturday night. The Kids whined and complained and reluctantly tried these tacos and the coleslaw too. You know what I got? RAVE reviews!!! They reluctantly saved some for Ninja when he got home and he GUSHED over them too! BIG WINNER!


Freezer Meal Hawaiian Chicken Tacos

Adapted from Pinch of Yum


1.25 lbs. boneless skinless chicken thighs
2 cups fresh pineapple, finely chopped
1/2 jalapeño, minced (remove ribs and seeds for less heat)
half of a red onion,
finely chopped
3 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon salt
teaspoon sriracha (up to a tablespoon of you like heat)
1 tablespoon mustard
1/4 cup mayonnaise
2 tablespoons olive oil
2 tablespoons water
1/2 tablespoon vinegar
1/2 jalapeño (the other half not used above)
1 clove garlic
1 /4 teaspoon dill juice
2 tablespoons parsley, chopped
2 tablespoons cilantro, chopped
1/4 teaspoon onion powder
salt & pepper to taste
1/2 bag coleslaw

In a freezer bag, combine the first 10 ingredients (the chicken down to the mustard). Freeze.





SLOW COOKER: Add 1/4 cup of water before cooking. From thawed, 3-4 hours on high.

Before serving mix together the jalapeño ranch dressing, the last 10 ingredients (the mayo to the salt & pepper).

Toss dressing with coleslaw.

Roll tortillas stuffed with Hawaiian chicken and top with jalapeño ranch slaw.








I love pulled pork! When we go to Ribfest, I get a big HEAPING pile of pulled pork. My Mom’s last meal request was my pulled pork. We brought a few crockpots to the Hospice and we had a pulled pork party with my siblings, uncles and the staff! I was pretty skeptical of this recipe because I have worked on my Pulled Pork recipe for so long and it is THE BEST. I am amazed to say it but, this was pretty good. Like, really good. You could make sandwiches with the pork but we just had piles of pork with our freezer biscuits from above and coleslaw. It was SO good! I was worried that it would be dry but it was super juicy and flavourful! I went in for the leftovers the next day and they were GONE! Both HBear and SBean split the leftovers for lunch and left me high and dry! I will have to keep an eye out for pork sales and put a few more in the freezer for future dinners!

Freezer Maple Pulled Pork
Adapted from Sweet Peas & Saffron


2-3 lb pork butt
½ onion, sliced
⅓ cup maple syrup
⅓ cup apple cider vinegar
1 teaspoon salt
2 teaspoons chili powder

Combine all ingredients in a Ziplock freezer bag.



Freeze.

When you are ready to cook, thaw completely before dumping into the slow cooker and cooking on low for 8 hours.


Shred pork with two forks. Toss with cooking liquid to taste.

The sun came out this week! For a few hours anyways 😂. We ran the 12 hour nutrient rich cycle of our Lomi and got beautiful healthy soil for some of my indoor plants! Maybe they will stay alive now? 😂 SBean also got her new rock tumbler going so it was pretty loud in our house for the first half of the week! We had relaxing mornings in bed, started The Last of Us on HBO, and tried the new craft beer from Neighbourhood Brewing. I introduced the Kids to Billy Madison while Ninja was at Anthrax with our BIL, bought my Dad his favourite chocolates, and Ninja and I made 50 helpings of Vegetable Noodle Soup for Hot Lunch! SBean got her stitches out, had a shopping/bubbletea/sleepover with her Gr2Besty and Oliver was cuter than ever! 😍 I continued on my Yoga With Adriene journey and although it stayed sunny, the snow returned but no worries, everyday is spring when my Ninja brings us home flowers 💕.
