Friday was a long day. I was the school helper again and this week we made Metis Christmas Pudding. It was delicious… if you like Christmas pudding. LOL I was surprised that almost every child liked it. Here is the recipe we used,

En dimiyoer Puchinn
(Half Hour Pudding)
Recipe from The Metis Cookbook and Guide to Healthy Living

1 ½ cups brown sugar
1 cup flour
1 cup assorted jumbo raisins
½ cup milk
2 teaspoons baking powder
2 cups boiling water
1 tablespoon butter
¼ teaspoon nutmeg
Preheat oven to 350.
Combine ½ cup brown sugar, flour, raisins, milk and baking powder.
Place mixture in greased bowl. (Make sure bowl is oven safe)
Make sauce: Combine boiling water, 1 cup of brown sugar, butter and nutmeg.
Pour sauce over mixture.
Bake for 30 minutes.

That night we had some friends over to watch the Canuck vs. Oilers game. This is always a fun game as Ninja and I are Oiler fans living in Canuckland J
We made bacon-wrapped BBQ Mushrooms 


and delicious little soft pretzel bites. Dad and I bought this amazing honey lime ginger mustard at the Christmas craft show a while back and I have been waiting to make soft pretzels to go with it!!! It was awesome and easy!!


Soft Pretzel Bites
Adapted from Fabtastic Eats
1 1/2 cups warm water
1 tablespoon sugar
2 teaspoons kosher salt, plus extra for sprinkling
2 1/4 teaspoons active dry yeast (1 packet)
4 1/2 cups flour
4 tablespoons unsalted butter, melted
10 cups water
2/3 cups baking soda
1 large egg beaten with 1 tablespoon water
In the bowl of a stand mixer, add the water, sugar, salt, and yeast. Whisk it together.
Allow it to sit for 5-10 minutes until foamy.
Fitted with the dough hook, add the melted butter and flour, mix to combine.
Knead on medium speed for 5-6 minutes until smooth to the touch and not sticky.
Lightly grease the bowl, add the dough back in, cover with plastic wrap and allow it to rise for one hour or until it doubles in size.
In a large pot, bring the water and baking soda to a boil.
Preheat the oven to 450 degrees and line a couple baking sheets with parchment paper.
On a lightly oil surface, punch down the dough and separate into 8-10 pieces.

Roll into ropes about 1/2 inch thick. Cut bite sizes about one inch long.

Add them to the boiling water in batches for 30 seconds at a time.

With a slotted spoon, remove them to the parchment paper
Brush each piece with the egg and water mixture and sprinkle with kosher salt.


Pop in the oven for 10-12 minutes, or until golden brown.

Repeat until you’ve used up all your dough, dip and enjoy!


The Weekly Creative
On Saturday morning we made those yummy peanut butter squares, they are awesome and I did it all with the microwave so HBear could be the BIGGEST helper LOL.

Peanut Butter Marshmallow Squares

1/2 cup margarine
1 cup smooth peanut butter
1 package butterscotch chips
400g bag multicolored miniature marshmallows

Spray a rectangle baking dish with Pam

Put margarine and peanut butter in a large glass bowl and microwave until they are melted together. (15 second increments)
 


Immediately stir in butterscotch chips until they are melted and all lumps are gone.


Let bowl cool until you can comfortably hold your hand on the bottom you don’t want your marshmallows to melt.



Stir in marshmallows and pour mixture into the baking dish.

Refrigerate.


When solid, cut into squares. If storing, separate layers in the container with waxed paper.
