Homemade Pizzas, Caesar Salad and Dessert Pizza

I am Canadian! I don’t really get the Superbowl. I get the Stanley Cup, oh yes, but football? 

Meh. 

I guess there is 1 good thing to come out of this American “holiday”… food!

We are having a few friends over at 3pm and Honeybear has swimming lessons at 5:30 so I thought what can Ninja help with that won’t take him away from the TV while I am at the pool? Duh… PIZZA. Actually Ninja is the best sous chef out there. He follows direction (mostly), can read a recipe like no ones business and actually likes prep work! So I made the menu and we were off!

Deluxe Garlic Bread Pizza
makes one pizza
Dough:
Adapted from – How Sweet Eats

1 1/8 cups warm water (100-105 degrees)
3 teaspoons active dry yeast
1 1/2 tablespoons honey
1 1/2 tablespoon olive oil
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried basil
5 tablespoons unsalted butter
2 garlic cloves, pressed or very finely minced


In a large bowl, combine water, yeast, honey and olive oil. Mix with a spoon, then let sit until foamy, about 10 minutes. Add in 2 1/2 cups flour, salt, garlic powder and dried basil, Mix with stand mixer, the beater attachment, until the dough comes together but it still sticky. Put on the dough hook and work the additional 1/2 cup flour (or what is needed to make a nice elasticky dough). Spray the same bowl with Pam then place the dough inside, turning to coat. Cover with a towel and place in a warm place to rise for about 1 1/2 hours.

After the dough has risen, punch it down and place it on a floured surface. Using a roll pin or your hands, form it into your desired shape. Place the towel back over the dough and let sit in the warm place for 10 minutes. While the dough is rising again, melt 3 tablespoons of butter. Mix it with the garlic. If you have time roast the garlic first… extra yummy!

Bring the dough back out and using a spoon or pastry brush, douse the dough, using all the butter mixture!

This dough is awesome! Like a pan pizza from Pizza Hut. Ninja & I met at Pizza Hut so maybe it tastes so good because my brain links the 2… Nah it just tastes damn good!


Before oven and before buttered
Sauce:
Adapted from – Primlani Kitchen

This sauce has hidden goodness in it… carrots. You can’t tell, it makes it a bit thicker and the family will never know you are tricking them into eating their carrots. 🙂
5 cloves of garlic
1/4 cup olive oil
1 large onion, finely diced
3 carrots, peeled and diced
1 cup fresh basil
2 tablespoons fresh oregano
2 28 oz cans plum tomatoes


Place 5 cloves in foil, sprinkle salt and pepper, drizzle olive oil, wrap, and place in oven for 25 minutes. When cool peel the skin off.

Chop onions and carrots in Ultimate Chopper (makes life so much easier) and place in a medium pan with olive oil. Add tomato paste. Cook till vegetables are softened.


Put both cans of tomatoes in mill and mill baby mill! This is the trick… it makes the sauce soooo much sweeter and less bitter.

Add garlic, salt, pepper, basil, oregano, and tomatoes. Fill the empty can with water and add to the pan. Bring to boil and then simmer for 1 hour, stirring occasionally.

Pizza:
100 g pizza pepperoni
1/2 red onion, diced
1 lb of mushrooms, peeled and sliced
1/2 pepper (your choice of color)
½ pack of bacon, cooked and cut up
Pizza mozzarella

Preheat oven to 400

Sprinkle pizza stone with cornmeal and put buttered dough into oven for 5-7 minutes. Take it out and sauce it up, add onion, mushrooms and pepper. Spread on the shredded cheese and then the pepperoni and bacon. Place back in oven for about 25 minutes or until nice and bubbly.

We added pineapple…cause hey, we don’t want to waste!
Thin Crust Funky Hawaiian and BBQ Chicken
Makes 2 pizzas

Dough:

Adapted from YummyMommy


2 1/4 teaspoon active dry yeast
1 1/3 cups warm water
1 tablespoon olive oil
3 1/2  cups flour
2 teaspoon salt
2 teaspoon sugar


Mix together yeast, 3 cups of flour, salt, and sugar in a Standing mixer. Set aside.  In a large measuring cup, stir together the warm water and oil.  Pour the water mixture into the flour mixture, mix with beater attachment until the mixture comes together into a dough, add more flour if needed.  Change to dough hook, kneading for 7  minutes until smooth and elastic.

Spray the inside of the bowl with Pam, then set the dough inside, turning to coat it all over with oil.  Cover the bowl with plastic wrap and set some place draft free and warm to rise for about 90 minutes.

Punch down the dough on a lightly flour surface, then shape and pull into two 10-12 inch rounds for thin crust.  

Don’t forget to poke with a fork BEFORE it goes in the oven!!

Sauce:
Same as above 

Funky Hawaiian Pizza

100 g deli ham, cut into strips
1/2 red onion, diced
1 lb of mushrooms, peeled and sliced
1/2 pepper (your choice of color)
½ pack of bacon, cooked and cut up
½ can of pineapple tidbits
Enough sauce from above to cover pizza
Pizza mozzarella
Cilantro to sprinkle

Preheat oven to 400

Sprinkle pizza stone with cornmeal and put dough into oven for 5-7 minutes. Take it out and sauce it up, add onion, mushrooms, pepper and pineapple. Spread on the shredded cheese and then the ham and bacon. Place back in oven for about 25 minutes or until nice and bubbly.


BBQ Chicken Pizza

2 chicken breasts (cooked)
2 yellow onions, sliced thinly
1 tablespoon olive oil
1 tablespoon butter
Pinch of sugar
BBQ sauce of choice (I used Sweet Baby Rays)
Pizza mozzarella

Preheat oven to 400

BBQ chicken breasts seasoned with salt and pepper. Slice into small cubes and toss in bbq sauce.

Caramelize onions in oil & butter. When they start browning add a sprinkle of sugar.


Sprinkle pizza stone with cornmeal and put dough into oven for 5-7 minutes. Then, top pizza first with cheese (this is instead of sauce), then onions and chicken. Drizzle more bbq sauce on top just to make sure it is saucy enough :). Place back in oven for about 25 minutes or until nice and bubbly.




Caesar Salad

This is my favorite dressing. It is thick and delicious. Use good garlic, just not Russian Red unless you like it hot! I use anchovy paste over fillets so I always have it on hand, but if you prefer fillets, that works too 🙂


3 cloves of garlic
4 tablespoons of red wine vinegar
¾ cup mayo

a squeeze of anchovy paste

2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
2 teaspoons lemon juice
¼ cup of grated Parmesan cheese (if you like parm add more, I am not the biggest fan)
¼ cup grapeseed oil
Salt and pepper to taste
½ pack of bacon, cooked and crumbled
4 pieces of whole wheat bread, cut into cubes
2 cloves of garlic
Butter

Romaine lettuce


Add first 8 ingredients into the food processor, puree until smooth. Slowly add the oil until creamy. Add salt and pepper and put into fridge till dinner.




Toss bread cubes in skillet on medium heat with butter and garlic. Keep add butter and tossing until nice and crispy but still soft. Broil if need to get the perfect texture.

Add Romaine to big Tupperware bowl, add dressing and shake it up!

Top with croutons and bacon!

Chocolate Chip Cookie Dessert Pizza
Makes 1 pizza

2/3 cup margarine
2/3 cup shortening
1 cup white sugar
1 cup brown sugar
2 large eggs
2 teaspoons vanilla
3 cups AP flour
1 teaspoons baking soda
2 cups chocolate chips
1 cup mini marshmallows
Candy “toppings” of choice

Beat margarine, shortening. Add sugars and cream them together. Beat in eggs one at a time. Beat until light and fluffy. Add vanilla.  In a separate bowl mix flour and baking soda, slowly mix flour mixture into wet mixture. Add chips.


Preheat oven to 350

Spread batter on round baking dish. Bake for 10-13 minutes until edges are brown and middle is set. Take out and sprinkle marshmallows on top. Make sure you leave a “crust” 🙂
Bake for 2 more minutes and take out. Sprinkle with candy toppings. Cool and cut into wedges.

Of course, now that I said Ninja follows directions he went and did this…



I had to go feed Sydneybean and asked him to top the “pizza” with the “sauce” and “toppings”…. so he did this. LOL In fact, you should cover the whole pizza with marshmallows, leaving a “crust” and sprinkle on more toppings, but I suppose this way is better for the baby weight I have to start losing at some point… wait a second, is he trying to tell me something? 

Actually, while I was at Honeybear’s swimming class I ran into an acquaintance, she was all like “hey you must be due soon!” 


SERIOUSLY.  

“Ummm, actually she is 9 weeks old.” Ruh-Roh. Hahaha
