Martin Luther King Jr and Gingerbread Waffles


We are prone to judge success by the index of our salaries or the size of our automobiles rather than by the quality of our service and relationship to mankind.

Yesterday was Martin Luther King Jr day in the United States. Here in Canada we donโ€™t recognize his contributions that spread much further than just America by honouring him on his day of birth.

Why donโ€™t we?

You all know how much I LOVE quotes! I feel like someone out there said something about what I’m feeling that is so profound, that I could never say it better than them. So, in honour of MLK Jr. I would like to share some of MY favourite quotes from the great civil rights activist and leader. His words are so uplifting, meaningful and needed. Although he spoke them over 50 years ago, his words still provide guidance, empathy and dedication to human rights even today. Sadly, perhaps even more so today. Thank you Dr. King for speaking out and providing us with a voice of reason, compassion and love that will resonate with the masses for as many years as needed before we, as a whole begin to love and respect one another equally ๐Ÿ’›.

This past Christmas morning, Ninja and I made special waffles for the Girls. Gingerbread Waffles topped with maple syrup and whipped cream! These waffles were like eating the most delicious gingerbread cake ever! It is dessert for breakfast! I made a few extra so we could freeze them but they were gone in a day! If you are looking for a special breakfast that is sure to WOW and takes zero time/effort, look no further!

Gingerbread Waffles

4 eggs
1/3 cup sugar
1 cup molasses
1 cup milk
3 cups flour
2 teaspoons ginger
1 1/4 teaspoons cinnamon
1 teaspoon cloves
3/4 teaspoon salt2 teaspoons baking soda
2 teaspoons baking powder
1/2 cup unsalted butter, melted

Beat the eggs until theyโ€™re light and fluffy, about 2 minutes. 


Add the sugar, molasses, and milk and mix until blended, about 1 minute more.

In a separate bowl, mix together the flour, spices, salt, baking soda, and baking powder.

Add the dry ingredients to the egg mixture and beat until smooth. Stir in the butter.


Cook immediately in a waffle iron until golden brown.

 
 
This week I was lucky enough to tag along on HBear’s field trip up the mountain to do some cross country skiing! The weather was great, the scenery was magnificent and the kid’s laughter was infectious! What a fabulous time! I haven’t X-Country skied in decades so I was a bit worried but I had a great time and want to take the whole family up to try it out in the the near future!

The same time we were up at Nickel Plate skiing, I got this Facebook memory of 6 years prior, up in the same place with HBear but she was stubbornly putting her “skate” down and refusing to participate. OMG I LOVE this picture! ๐Ÿ˜‚๐Ÿ’›

On Saturday, Ninja and I were so excited to go see 1 of our favourite Canadian podcasters, Taggart & Torrens, at the Dream Cafe. Unfortunately just hours before the show was set to start, we got an email saying the show was canceled. Apparently all their gear was stolen out of the back of their van after their show the previous night in Vancouver ๐Ÿ˜ž So we made the best of it and went for a drink at The Nest & Nectar then out for dinner to Earls. Making sure that I am being accountable to my 2019 Goals!


Did everyone see the blood moon, wolf moon, full moon, eclipse? I think that’s what they were calling it, right? ๐Ÿ˜‚ I just got a bad picture with my phone but it was pretty spectacular! The Kids were BLOWN away. Pretty cool!


SBean got these super cute earmuffs for her birthday and she loves wearing them! We are growing her hair out for the dance recital and we are at a bit of an awkward stage, so she is happiest in her kittymuffs!

Finally, after a pretty great week… I stepped up my FitBit game! I haven’t won a step challenge in awhile but Ninja was sick in bed this week so I took advantage and made my step goal every day and won my 1st challenge of 2019!

Infusion Day & Slow Cooker Meals
