One down… One to go!
Maybe it’s because the kids are getting older or maybe it’s because I’m getting better 😂 but this year has been less work than previous years! SBean loves LOLs, they’re her jam. She’s totally into crappy plastic dolls and pretty much anything that you can find in the As Seen on TV Store. This year she wanted an LOL themed birthday party at her favourite place, her home away from home, the dance studio. Unfortunately all that shit is licensed! I could not find LOL printed balloons, plates, napkins or anything! With the rotating Canada Post strike I didn’t want to chance spending a ton of money on party supplies that might not get here for the party so we had to think outside the box.
While we worked on party supplies, Ninja worked on the cake! SBean wanted an LOL, 2 tiered rainbow cake with hot pink and black fondant 😳. He worked on it ALL day and it turned out AMAZING!!!

As you know, I am always trying to find new recipes and bring new dinners to our table. At the same time, I like to stick with what I know my family likes. My family likes Mexican food! So this week we tried a delicious Crustless Taco Pie for a little change! It had all our favourite comforting flavours in it but was presented in a whole new way! We licked the plates clean!
Crustless Taco Pie
Adapted from Simply So Healthy
1 pound ground beef
1 packet taco seasoning
3 green onions, thinly sliced
1/4 cup salsa
1 cup Mexican blend cheese shredded, quantity divided
4 eggs
2/3 cup heavy cream
Preheat oven to 350. Grease a pie pan.
Heat a large skillet over medium high heat. If your ground beef is low in fat or if your skillet is not well seasoned, you may want to spray the pan with coconut oil to prevent sticking.
When skillet is hot, add ground beef, breaking up into small pieces with a spoon or spatula. Cook, stirring occasionally until browned.
Drain beef and add taco seasoning and corn and cook according to package instructions. Set aside and allow to cool while continuing with the next step.
In a medium mixing bowl, whisk together the eggs and heavy cream. Stir in the green onions, salsa, 3/4 cup of the cheese, and the salt.
Stir prepared taco meat into the egg mixture. Pour this mixture into the prepared pie pan. Sprinkle remaining cheese on top.
Bake pie in preheated oven for 35-45 minutes or until the top is brown and the pie is set. Allow to cool for 5 minutes before serving.

On Thursday was the Downtown Penticton Light Up and HBear’s Glee Club preformed Christmas Carols! They did a great job! After the singing, we took advantage of all the fun activities that were going on. We wrote a letter to Santa, decorated gingerbread men, toured different shops downtown and enjoyed chatting with friends in the community.
Ninja joined SBean and her KBesty for reading time and to end the workweek we had Family Date Night at the movie theatre where we watched The Grinch!
That evening, SBean opened an early birthday present (her party dress) and we finished the cake.
Sunday morning was the BIG day! Miss Ashlie at Balance School of Performing Arts was AMAZING! She is so great with the kids, they were all laughing and dancing away! Ninja and I just got to sit and relax! They played games, opened presents, did pictures at the “Photo Booth” and then we had cake! It was a fabulous 2 hours!
