Salisbury Steak with Mushroom Gravy and Creamy Potato-Turnip Puree

I prefer the word ‘homemaker’ because ‘housewife’ always implies that there may be a wife someplace else.

Girl Guide Cookies.

Are. The. Devil.

HBear had to sell 2 cases of chocolate mint cookies for Sparks. Which means I had to sell 24 boxes of freaking chocolate mint freaking Girl Guide Cookies!!!!

Crap.

I hate those things 🙁 But thanks to family and friends we got them all sold 🙂 My sister bought the last 2 boxes in Cochrane, she of course wanted to support HBear… I told her I would ship them out but she was like “hell NO!” lol So this evening HBear and I took them to the Hospice House and donated them to the family area 🙂

For school, HBear had to pick out 5 things that would help her new classmates get to know her better 🙂 The trick was they all had to fit into a paperbag.

We brainstormed and made a list of all the things that make her who she is. From there we picked out 5 things…

1. Her Sparks sash with her badges. I sewed a few more on today, man am I a BAD sewer! LOL
2. Her favorite headband. Her “Paperbag Princess” headband she got in Calgary on our summer vacation.
3. A book from her favorite series, Nancy Clancy.
4. Some of the loot she has collected while geocaching.
5. A double-sided picture of her family, and her sister.

What a wonderful activity for the kids!

Today SBean had music class… she is still quite shy but the music just overwhelms her and she has no control,

She has to DANCE! Lol She really loves music, when I close my eyes all I can picture is Animal lol.

Scary but true 🙂

So that’s all I’ve got today. Thursdays are busy. Music class, Broadway class, Sparks, and Bowling. I still made time to do a yoga ab blaster OUCH and get bday stuff out for my sister, SIL and Grandpa.

Thursday is also the BEST TV night sooooooo,

later gator’!

Oh BTW… we had McDonalds tonight lol Take Out Thursdays 🙂 Buuuuut I made this the other night and it was super fantastic good! Enjoy 🙂

Salisbury Steak with Mushroom Gravy
1 large egg
1 tablespoon Worcestershire sauce
2 teaspoon Dijon mustard
1 1/2 lbs. ground beef
½ cup panko
½ small yellow onion, finely chopped
2 large cloves garlic, pressed
2 tablespoons oil
2 tablespoons unsalted margarine
3 cups beef broth
2 tablespoons cornstarch
2 cups mushrooms, sliced
1 tablespoon rosemary, chopped
2 tablespoons parsley, chopped

In a large bowl, whisk the egg with 2 teaspoons of the Worcestershire sauce, 1 teaspoon of the mustard, ½ teaspoon salt, and ¼ teaspoon pepper.

Add the beef, panko, onion, and garlic and mix until combined.

Shape into 4-5 oval patties about ½ inch thick.

Heat the oil and 1 tablespoon of the margarine in a skillet over medium-high heat. Add the patties and cook,

flipping once,

until well browned and cooked through (160°F), about 10 minutes total.

Transfer to a plate, and cover to keep warm. Wipe out the skillet.

In a small bowl, stir ¼ cup of the beef broth with the cornstarch.

Melt the remaining 1 tablespoon margarine in the skillet over medium-high heat. Add the mushrooms, rosemary, and ½ teaspoon salt and cook, stirring occasionally, until the mushrooms are browned, about 5 minutes.

Add the remaining beef broth, 1 teaspoon Worcestershire, and 1 teaspoon mustard. Stir the cornstarch mixture again and then whisk it into the skillet.

Cook, whisking occasionally, until the mixture is slightly thickened, about 5 minutes. Season to taste with salt and pepper. Return the patties to the skillet to reheat.

Serve sprinkled with the parsley.

November Meal Plan

In November, the smell of food is different. It is an orange smell. A squash and pumpkin smell. It tastes like cinnamon and can fill up a house in the morning, can pull everyone from bed in a fog. Food is better in November than any other time of the year. – Cynthia Rylant

My morning ritual of showering for a fresh start to my day has progressed to a once-a-week occurrence. Like everything else that my MS affects, less shower time is not by choice. I take sponge baths daily of course, but actual showers are reserved for when I have enough energy for the scary, slip-and-slide thrill ride known as my bathtub’s shower. – Debi Wilson
