Dublin Coddle and the Funk of Bitchiness

I was bitchy this past week.

Everybody has those weeks. I am not ashamed to say it. I am not happy that my attitude is less than stellar LOL but there comes a point where things just continue to pile up and pileup and you turn into that Mom you never wanted to be. 

The Mom that yells, the Mom with no patience, the Mom that tries to give the kids an early bedtime just to keep her sanity 😜.

It could be that I feel absolutely utterly unappreciated by the 4 people in my family.

It could be that I’ve had a wicked head cold all weekend.

It could be on top of my wicked cold, SBean had one too.

It could be that in my drunken stupor the other night I threw my shirt in the laundry with my name tag from the Pure Romance Party, still on it! After an hour of picking off all of the gummy residue I used my lint shaver to get the last remaining pieces… And totally ripped my shirt! Fuck! Masking tape will work… right?


It could be that for the first time in 4 years I have bitten my nails down to the quick. They are bleeding, raw and constantly hurt.


It could be the weather although I am so happy to say… The sun has come out periodically! That really does make everything that much better ☀️!

It could be that my Facebook feed is flooded with pictures of all my friends on fabulous vacations all over the world. I am feeling the twinge of the green monster.

It could be that SBean lifted up Ninja’s shirt the other day and said, “Mommy’s tummy is way way way way way way more chubbier than yours Daddy.” 😒

It could be that my Sister, fresh on mat leave, mentioned that her family sucks for not turning their clothes right side before laundry. I laughed because this is a common occurrence in our house. When I mentioned it to my family my Dad actually said, “we do that because it gets the clothes cleaner in the washing machine.” 😳😬

It could be that when I dropped my kids off at pottery camp I leaned in to give SBean a kiss and she quickly gave me a peck and then said, “OK go now.” When I leaned in to give HBear a kiss… She completely turned her head and refused. WTF?

It could be that when I picked my asshole kids up and asked how they were the Teacher raised her eyebrows and said, “errrr good. SBean did have 1 meltdown because someone used the tool she wanted.” Was that someone her Sister? “Yes. But don’t worry about it! Tomorrow we will put one at each end of the table.” 😳 😡

It could be that HBear came up to me with some very serious questions the other day. Questions like, “is it hereditary? All the red spots on your face? Are they going to be passed down to me?”

Which was way better than when I was talking about my Sis visiting and she said, “you mean your stepsister right?” Ummmm no?!?! That is a completely different blog post 😂.

It could be that I have been trying to do my safety test for Brownies for a month but I’ve been given the runaround from every help phone line, email, and online source “Available”. Now I have to go spend the morning with the District Commissioner doing it instead of fitting it into my free time.

It could be that my WpgBesty has not returned any of my phone calls in the past month 😡.

It could be that I’m getting my period.

It could be the senior citizen that banged into my heels with her cart 3 times at Walmart the other day.

It could be that The Bachelor is over. Yay Vanessa! I had her and Raven in my top 4!

It could be that every time I look at the news I see more and more that is making me sick to my stomach, angry, and scared for the future.

It could be at the spring always reminds me of my Mom. My Mom gardening, my Mom doing a happy dance because the sun is coming out, my Mom preparing to spoil me for my birthday.

It could be that my birthday is coming up… 38 feels very old this week.

It could be so many things. 

I have decided this week… I will not be a Bitch. 

My Sis and her family are coming in this week and my SIL and GQ will be here too! I refuse to be bitchy anymore! My head cold is now just a leaky faucet nose and like I said the sun is shining, so get over it! I am no longer allowing myself to be sad, cranky, or overthink any of these things that it “might” be.

I am over it.

You know something that did make me happy this week? Ninja and I had a double date! Well, a total geek double date 😂 at least. We invited 2 of our podcasting friends, a newly formed couple, Stef and Agent Palmer onto How Was Your Week, Honey? It was so much fun! We Skype with them and it was just like they were over but they were in Pennsylvania! We had so much fun that we had to make a two-part episode! For all my bitchiness if I really think about it, they were more good things this week than bad. Even in a week of the blahs, I still feel very lucky.

Speaking of lucky, every year I try to make an Irish dinner for St. Patrick’s Day. They all suck. Seriously, they turn out well and they taste OK but I like bold flavour and the Irish just don’t have many foods with bold flavors. Last year I did Irish Nachos 😂. This year I was at HBear’s last team swim practice so Ninja made our Irish feast.

He made… Coddle. What the hell is that? It is a bowl full of absolute Yummy-Ness! I don’t know if it’s a soup or stew but if it was a soup it is a delicious soup! If it was a stew it was the best damn stew I’ve ever had! It is potatoes, sausages, peppers, bacon and broth. I picked up jalapeño ham sausage and a smoked turkey sausage for this dish. My mouth is watering thinking of it! I have saved one last bowl for my dinner tonight (I am making salmon for the fam). I know St. Patrick’s Day is over but if you have a chance… Try this delicious Irish comfort food!

Dublin Coddle 

Adapted from Diethood


3 cups beef broth
1 pound smoked sausages, cut into thin rounds
1/2 package bacon, chopped
6 potatoes, peeled and sliced into 1/2-inch thick rounds
2 yellow onions, sliced into thin rounds
3 large carrots, sliced into thin rounds 

1 1/2 teaspoons thyme
2 tablespoons parsley, chopped


Preheat oven to 425.

In a large pan, combine beef broth, sliced sausages, and bacon; bring to a boil.

Reduce heat to low and simmer for 10 minutes.

Transfer sausages and bacon to a bowl and reserve the broth.

Lightly grease a casserole dish with cooking spray.

Spread one-third of the potatoes on the bottom of the casserole dish.

Arrange 1/3 of the onions and carrots over the potatoes, and season with a little salt, pepper and thyme.

Spread a layer of the previously prepared sausages and bacon over the layer of onions.

Continue to layer ingredients two more times, seasoning with salt and pepper and thyme as you go along.


Pour the reserved broth over the entire dish.

Cover with a lid and bake in the oven for 40 minutes.

Remove cover and continue to bake for 15 minutes, or until lightly browned on top.

Remove from oven and let stand 5 minutes.

Ladle into bowls and garnish with fresh parsley.

This week despite my rain-cloud-over-me mood, we had some pretty great times! It started on Monday! I dropped HBear off at school and when I saw her go into the building I parked and followed her in. She was being awarded a 5 C’s Award at the morning assembly and I wanted to surprise her!

 

On Wednesday I volunteered to go with SBean’s class on a trip to the library! We learned all about dinosaurs for Dino Week!

It was a good day for SBean as she passed Salamander that evening! She will now move onto sunfish! It’s funny how it took her 3 tries to get through Sea Otter and as soon as she decided she wanted to pass… it has been clear sailing ever since LOL.

On Thursday the sun came out! After a fun play date with my YBesty and her son we picked up HBear for Gifted and took some spring pictures.

 

 

After Gifted I picked up HBear for her orthodontics appointment. It has been confirmed. She needs 3 of her baby teeth pulled. She has only lost 5 teeth so far and her teeth are coming in very crowded. She will probably need need 4 adult teeth pulled before she gets her braces. 🤑🤑🤑😳

 
That evening we had Brownies! We talked about healthy eating and made yogurt parfait’s with granola and fresh fruit! We also had a yoga instructor come in and teach the girls mindfulness and some great poses for centring our thoughts.

On Friday it was the last day of school! HBear dressed up for St. Patrick’s Day and also in her team specific colour for the Rainbow Sports Games! HBear was on the yellow team. In between getting ready for hot lunch, hotdog day, I snuck into the gym to take some pictures of the fabulous school spirit!

While I was there Ninja was with SBean at her first gymnastics class of the year! She loved getting back into the gym!

 
This weekend we took it easy as nobody was feeling very well. The Girls played games, dress up and outside!

 
 
Today is the first official 1st day of spring break and the Girls started their pottery classes! I was a little worried about SBean even going to the camp because she is 4 and the class is for 5-10. I talked to her teacher AND her preschool teacher and they thought she would be able to handle it. Half way through the morning I got a call and my stomach dropped. She said, “Hi. Sydney…” I almost interrupted with “I’ll be right there.” when she continued, “is still hungry after snack time. Would you mind if I gave her some yogurt or applesauce?” 😂 That’s my Bean!

 
When they got home you would have never known that SBean screamed at her sister in front of the whole class 😂.

And throughout it all I maintained my step goals by running, stepping while watching TV and basically just being more active! I made a new personal best and won both of my challenges!
